Isn’t sweet potato the best thing ever?
And if you don’t think so, you’re not cooking it right (and you clearly haven’t tasted sweet potato fries yet!).
This is clearly an ‘anytime’ meal, but works well for brekky! I add one or two fried eggs on top for some protein. My breakfast (and every meal) rule: must have some fat, fibre (aka veggies) and protein. This has helped me heal adrenals, thyroid and gut issues.
- 1 small sweet potato, diced into 1cm
- 1 Tbsp fat
- 1 onion, diced
- 1 medium apple, diced
- ½ tsp cinnamon
- In a large on high heat saucepan add the diced sweet potato and a few tablespoons of meat stock or water and cook for about 5 minutes, until water evaporates.
- Add the fat and toss it to coat the sweet potato, add the onion and bring the heat down to medium-high. Cook for about 5 minutes, then add the apple and cook for another 10, adding the cinnamon in the last few minutes.
Add some protein like chicken.
