Banana Nut Mini Muffins (or Delicious Almond Cashew Nut Butter!)
Serves: 18
These mini muffins make the perfect breakfast on the go or snack. The mixture even makes a delicious nut butter.
  1. Preheat oven to 350°F / 175°C.
  2. Blend all ingredients in high speed blender (like a Vitamix). You will need to use the tamper tool to blend.
  3. Lightly spray mini muffin pan with coconut oil, and spoon in mixture for 18 mini muffins (the muffins won't rise).
  4. Add banana slices to each muffin.
  5. Bake for 20 minutes.
