Healthy food doesn’t have to be complicated. In fact, it’s much much better if it’s simple – you’re body can easily recognise it and digest it. These are the kind of meals I focus on making these days – they are not over the top, they don’t have a million ingredients and they don’t take hours (or days) to prepare. And the best part? This is healing food.
The other night I made a big pan of roasted veggies and some steamed veggies and had a ton of leftovers that I had no idea what to do with. Then the idea for turning them into a frittata popped into my head – and luckily it tasted really amazing.
I paired it with a super quick chopped up tomato salad with red onion, herbs and some lemon juice, and ate it alongside a baked potato. Read the rest of this post »
