This is just one of the many, many ways that I eat potato. Since I am having them at every meal I have to get creative! But really I usually end up doing this same potato/garlic/parsley/flax oil combo, because it’s so yum and easy. I promise I’ll try harder!

Potatoes play a very important role in the Gerson diet. Despite the bad rap they’ve gotten, potatoes are actually incredibly nutritious. The basis of the Gerson therapy is to restore potassium balance in the body, and luckily potatoes are naturally low in sodium and high in potassium (higher than bananas).
